1. Paalak Paneer

Ingredients:

Spinach (4 cups), paneer cubes (200g), garlic (6–7 cloves), ginger (1 inch), green chillies (2), onion (1), tomato (1), cumin seeds (1 tsp), garam masala (½ tsp), turmeric (¼ tsp), salt, oil/ghee.

How to prepare: 

  • Blanch spinach for 3 minutes in boiling water and then transfer to cold water.
  • Blend into a smooth puree for gravy.
  • Add ghee in a pan with cumin, chopped garlic, green chilli, and ginger and saute well.
  • Add chopped onion and tomatoes, and cook well.
  • Now add turmeric, salt, and garam masala.
  • Pour the spinach puree and cook well for 10 minutes.
  • Add paneer cubes and coat them well in gravy, serve hot. 

2. Dal Paalak

Ingredients:

Toor dal (½ cup), spinach chopped (2 cups), tomato (1), turmeric (½ tsp), garlic (5 cloves), cumin (1 tsp), mustard seeds (½ tsp), red chillies (2), curry leaves, ghee, salt.

How to prepare:

  • Pressure cook toor dal for 10 minutes with turmeric, salt and chopped tomato.
  • Add spinach to the cooked dal and let it cook for 5 minutes until soft.
  • Take a pan and add ghee, cumin seeds, mustard seeds, garlic, red chilli and curry leaves.
  • Let it temper and pour tadka over dal and mix gently. 

3. Garlic spinach stir-fry

Ingredients:

Fresh spinach (3–4 cups), garlic sliced (6 cloves), oil (1 tbsp), salt, and black pepper.

How to prepare: 

  • Wash spinach in running water and chop well.
  • Add oil in a pan along with chopped garlic.
  • Sauté until golden brown.
  • Add spinach and cook for 3 minutes on high flame.
  • Season with salt and pepper and serve.
