Follow the step-by-step, easy recipe to make Thekuas at home, so you can enjoy this iconic Chhath Puja treat with ease.
Ingredients you will need
1. 2 cups whole wheat flour (atta)
2. 1 cup grated jaggery
3. 1/4 cup ghee (clarified butter), melted
4. 1/2 tsp cardamom powder (elaichi powder)
5. 2 tbsp grated coconut (optional for richness)
6. Water as required for kneading the dough
7. Ghee for deep frying
1. Take a large kneading bowl and pour in the whole wheat flour, grated jaggery, cardamom powder, and grated coconut. Add the melted ghee and mix well to get a grainy texture.
2. Gradually add water, little by little, and knead into a soft yet firm dough. Ensure it's pliable but not sticky.
3. Divide the dough into small balls. Now, take one ball at a time and flatten it to 1/4 inch thick. Use a thekua mould or fork to imprint traditional patterns for an authentic look.
4. In a deep-bottomed pan, heat ghee over a medium flame. Frying thekuas on pure desi ghee will give them a richer taste.
5. When the ghee is hot, slide the flattened thekuas carefully. Fry until golden brown on both sides, flipping carefully to avoid breaking.
6. Once the thekuas are nicely fried, take the help of a slotted spoon to take out the thekuas from the pan. Place them over a tissue paper to remove the excess ghee.
7. Let the thekuas cool down at room temperature - this makes them crispier.
