Ingredients:
- 1 cup fresh moringa leaves (washed and cleaned)
- ½ cup coconut (grated)
- 2-3 green chillies (as per the taste)
- 1 tablespoon tamarind pulp
- 1 tablespoon roasted peanuts or chana dal
- 2-3 cloves garlic
- ½ teaspoon cumin seeds
- Salt to taste
- 1 teaspoon oil
For tempering (Optional):
- 1 teaspoon mustard seeds
- 1 dried red chilli
- 5-6 curry leaves
- ½ teaspoon urad dal
- 1 teaspoon oil
Instructions:
- Saute the Moringa leaves: In a pan, heat oil and add moringa leaves. Saute them for 2-3 minutes until they shrink.
- Blend the chutney: In a mixer, add sauteed moringa leaves, coconut, green chillies, tamarind, peanuts, garlic, cumin seeds, and salt. Blend these with a little water to make a smooth chutney.
- Prepare the tempering (Optional): In another pan heat oil and add mustard seeds, urad dal, dried red chilli, and curry leaves. Let them splutter a bit and then pour it over the chutney.
