How to make Khoya at home
- 1 litre of full-fat cow or buffalo milk
- A heavy-bottomed pan or kadhai
- A wooden spatula for stirring
Steps to prepare at home:
- Pour milk in a pan and let it boil over medium heat for 5 minutes
- Once the milk is boiled, lower the flame and stir well to avoid lumps.
- Once it cools, scrape off the malai from sides and put it back in for extra creaminess
- Again put milk on boiling and boil until it redcues to one-fourth of its original quantity
- Once the milk starts leaving the sides of the pan and turns solid, turn off the gas.
- Your Khoya is ready to be used for delicious mithais.
- Consume Khoya within 4 days for freshness or store in freezer for long-shelf life.
Tips for perfect khoya
- Use full-cream buffalo milk for creaminess.
- Cook on a slow flame to enhance the flavour and thickness of khoya.
- Add a few drops of ghee in the end for aroma and shine.
