How to make Kombucha at home
Ingredients:
- 4–5 black or green tea bags (or 2 tbsp loose-leaf tea)
- 1 cup sugar (preferably white cane sugar)
- 3–4 litres of water
- 1 SCOBY (Symbiotic Culture of Bacteria and Yeast)
- 1–2 cups of starter tea (unflavoured kombucha from a previous batch or store-bought raw kombucha)
Steps to prepare:
- Start by boiling 3-4 litres of water and add tea bags, let it steep for 15 minutes.
- Once brewed, remove the tea bags and add 1 cup of sugar.
- Stir well, and let it cool to room temperature completely.
- Pour cooled tea into a glass jar with 1-2 cups of water and place the SCOBY on top.
- Cover the jar with a clean cloth and secure with a rubber.
- Place the jar in a warm, dark area for 7-10 days for fermentation.
- Remove the SSCOBY and set it aside with about 1-2 cups of liquid.
- Pour the remaining Kombucha into the bottles using a funnel.
- You can add flavours to your kombucha like ginger, mint, hibiscus, fruit pieces for added aroma
- Seal the bottle tightly and let it ferment at room temperature for 3 days.
- Once ready, refrigerate it to enjoy chilled.
