Ingredients (Serves 10-12 vadas)
- ½ cup rice flour
- ¼ cup semolina (rava/sooji)
- ¼ cup all-purpose flour (maida)
- 1 medium onion, finely chopped
- 2 tbsp hot oil (for crispiness)
- 2 tbsp grated coconut
- 2 green chillies, finely chopped
- 1 tsp cumin seeds
- A few curry leaves, chopped
- 2 tbsp coriander leaves, chopped
- Salt to taste
- Water
- Oil.
How to make at home:
- Take a bowl and mix rice flour, semolina, maida, salt, cumin seeds, chopped onions, green chillies, curry leaves, and grated coconut.
- In a small pan, heat 2 tbsp oil and pour it over the flour mixture.
- Mix this mixture well. Now, gradually add water and knead it to make a firm yet stretchy dough
- It should not be too soft or sticky.
- To begin shaping the vada, grease your palms with oil and take a small portion of the dough.
- Flatten this dough into a round puri-like shape, which should be slightly thick
- Maddur vadas are slightly thicker than usual vadas.
- Repeat the same process with the remaining dough.
- In a deep pan, heat oil on medium flame.
- Slip the shaped vadas gently into the hot oil.
- Fry it until golden brown and crispy.
- Flip it occasionally and make sure they are cooked evenly.
- Remove it from the pan and drain it on paper towels to remove the excess oil.
