1. Begin by boiling water in a saucepan.
2. Add carom seeds, rock salt, dill leaves, and buckwheat flour to the boiling water.
3. Keep stirring until it all comes together and forms a lump.
4. Wait for a few minutes to let the steam escape before kneading the dough to avoid burning your hands.
5. Knead for about 5 minutes until it forms a smooth dough.
6. Cover it with a piece of cloth or utensil and let it rest for around 30 minutes.
7. Divide the dough into balls and, using a rolling pin, flatten these slightly one by one to make roti.
8. Place a roti on a hot tawa or skillet.
9. Cook the roti for 1-2 minutes on one side and flip it to cook the other side.
10. Cook on a low flame; otherwise, the roti feels doughy or uncooked.
11. Brush ghee to add more flavour and moisture. Keep it covered in a container.
12. Repeat the process with all the dough balls.
