It’s the 79th Independence Day. One of the fantastic ways to express our love towards the nation is by preparing food dishes based on the colours of our national flag – saffron, white and green. It creates the perfect patriotic vibe and lets us enjoy the festive recipes. Let’s celebrate India’s freedom and vibrant culture by indulging in the 6 best tricolour foods.

1. Tricolour pulao or rice

Cook the rice and divide it into three portions. Use cooked carrots or tomato puree, or paneer curry for the orange layer. Leave the second portion plain for the white layer. For the green layer, mix one portion with sautéed spinach puree.

2. Tricolour idli

Grind the soaked idli rice and urad dal into a smooth batter and add salt. Divide it into three parts. Add orange food colouring to one portion and green to another, leaving the third portion plain. Grease the idli moulds, fill them with the coloured batters, and steam for 10-12 minutes. Serve this tricolour idli hot with coconut chutney and sambar.

3. Tricolour barfi

Grind soaked and peeled almonds into a smooth paste. Cook the almond paste in hot ghee, adding sugar until it thickens. Divide the mixture into three equal portions. Mix saffron into one part for orange and pistachio paste into another for green, leaving the third part white. Layer the orange, white, and green mixtures in a greased oven tray, pressing down each layer firmly. Let it set, then cut into squares or diamonds.

4. Tricolour dhokla

Prepare the batter using gram flour or besan and water. Divide the batter into three equal parts. Add tomato puree to one portion for orange colour, leave the middle part plain for white, and add spinach puree to the third part for green colour. In a greased steaming tray, pour the green batter, steam it slightly, then add the white batter, steam again, and finally, pour the orange batter on top. Steam until all layers are fully cooked. Once cooled, cut the tricoloured dhokla into pieces and serve with chutney.

5. Tricolour dosa

For the orange layer, use carrot puree with the dosa batter, for the white layer, it is normal urud dal and rice dosa and for the green layer, mix mint, coriander and palak puree with the dosa batter.

6. Tricolour cake

Make a vanilla cake batter and divide it into three equal portions. Add a few drops of orange food colouring to the first portion for the orange layer, leave the second portion plain, and add drops of green food colouring to the third portion for the green layer. Grease and line the cake pans, then pour each coloured batter into separate pans. Once cooled, stack the cakes with frosting between each layer. Frost the entire cake with a neutral frosting and garnish as desired.
